The calendar says it is Spring, but I’m not sure Mother Nature agrees!  Some of you may be getting Spring fever and thinking about what you want to plant in your gardens this year.  Some of you may have even already started seeds inside. Here is a recipe submitted by Dee Schriver that uses some Squash.

Maple—Walnut SquashMaple Walnut Squash Recipe

4 c. squash (butternut, buttercup)

1/4 c. maple syrup

1/4 c. butte

1/2 tsp. salt

Pinch of cloves

1/2 c. chopped walnuts


Cook and mash squash.  Add Syrup, butter, salt, and cloves.  Mix well. Place in buttered casserole dish.  Sprinkle with walnuts and bake at 400º for 20 minutes.
